Fast meals save the day. One pot meals save your sanity. Seriously, simplifying meals may be the key to sticking to healthier options. This is definitely a go-to, quick prep, tasty meal. I love rice, and have always been surrounded by cultures who favor it. Since rice is a grain it can be difficult for the body to digest, and ultimately not conducive to gut healing. With that being said, cauliflower rice to the rescue! Riced cauliflower mimics the look and has a similar texture to rice. Not to mention another clever way to incorporate more veggies to your food repertoire. You can buy it pre made, frozen, or make it yourself. I buy the pre-made, organic, frozen version from Trader Joes because "aint no mama got time for that!" What you will have time for is this super fast but "not-a-chef", friendly meal. Grab these ingredients and follow along:
Cauliflower Rice
Green beans
Carrots
Onions
Garlic
Shrimp
Turmeric powder
Coconut Oil

1. Dice or chop your carrots, onions, and garlic.
2. Then heat your pan/skillet and add coconut oil. I prefer a skillet to get a more crisp texture in the end. Fry the shrimp with a med/high heat.
3. Add in chopped onions, garlic, carrots, and salt.
4. Once carrots are cooked to your preference, add in defrosted cauliflower rice.
5. Mix in chopped green beans. Cover pan to allow ingredients to cook completely. I finish and serve with turmeric and black pepper on top. Yum
