In The mood for Food
I love food. All kinds. I've really been craving Mediterranean style food lately. Without going grocery shopping for a specific list here is how I made this delicious meal.
Skewers: I added olive oil then seasoned my chicken breast with salt, turmeric, paprika, garlic, and pepper. Mixed it all in a bag then stacked my skewers with the chicken, an assortment of bell peppers, and zucchini. I roasted them inside the oven at 450 degrees for 10 minutes on each side.
Cauliflower Rice: I used the frozen organic cauliflower rice from trader joes. I put a thin layer of coconut oil on a skillet then added my thawed rice. Shook some Turmeric powder on the rice, but wish I had some saffron. I chose to bake it in the oven just because my chicken was already in the oven. It also is a good way to give the cauliflower rice a crispier texture.
Hummus: Blend up one can of chickpeas along with 1/4 cup of lemon juice, 1 clove of garlic, 2 tablespoons of extra virgin olive oil, salt, 3 tablespoons of water. Once its blended to your preferred texture top it with paprika and extra virgin olive oil.
I sliced my cucumbers up and added a few chopped mint leaves. It doesn't get any fresher than that.
